Everyone has their favorite season. For most people it’s the summer; they love going to their cabins, being on the lake,
enjoying the warm weather. Since I’m not made for the heat, summer is far from my favorite part of the year. (To be honest, I’d rather enjoy a blizzard than a heat wave). For my husband and me, we love everything about the fall; from the cool, crisp weather to watching the colors of the leafs change to the holidays. (A little fun fact: my husband and I met in the fall and we got married in the fall). There is nothing about this season we would change.
My husband has a sweet tooth. A big one. One of his favorite sweet treats is my homemade Pumpkin Fluff; something I only make this time of the year. It’s an extremely easy dish to make – if you can stir, you can make Pumpkin Fluff. I originally found this recipe when we first started dating and I needed to bring a dish to a party to share –I was short on time and needed to whip something up fast. You can now find this recipe all over Pinterst along with a collection of
fun, adorable ways to serve it (e.g. clean out a small pumpkin and use it as your serving dish). You’ll also find an assortment of different cookies and treats to serve with the Fluff. I prefer ginger snaps. (I prefer to use homemade but in a pinch will use store bought). Without further ado, here is the easiest dessert recipe you will ever see:
16 oz. Cool Whip (thawed)
5 oz. instant vanilla pudding
15 oz. can of pumpkin (not pumpkin pie filling; just plain ol’ pumpkin)
Pumpkin pie spice to taste (I usually use ¼ teaspoon – it just depends on how intense you like the flavor)
Stir all ingredients together in a large mixing bowl and place in the fridge until you are ready to serve! That’s it!
